CSM Ingredients Functional Oils Solutions: Release and Cutting Oils

In industrial bakery and pastry production, stickiness on trays, molds, and conveyor belts, clogged nozzles, and residue on blades slow down production, increase waste, and compromise the final result. 

 

The real challenge, therefore, is to achieve rapid and uniform demoulding and clean cuts in every condition, while maintaining a neutral sensory profile and reducing system downtime. 

 

CSM Ingredients has developed a series of Functional Oils that meet this need. In particular, the Boeson® range has been developed: Boeson® Trennwax, a release agent, and Boeson® Schneideöl CD 130, a cutting oil. 

 

Release agents wet the cooking surface and form a water-repellent microfilm that prevents the product from sticking to the surface during cooking, cooling, and storage; accurate dosing prevents excessive splashing, accumulation, and unpleasant flavors. Cutting oils deposit a controlled lubricating layer suitable for contact with food on blades/wires to reduce friction, allowing for clean cuts and portion control while reducing the frequency of cleaning cycles.
